Inspired by Cafe gratitude, I re-created these bars. They are filling and satisfying for hours on end. With a delightful blend of essential fatty acids and antioxidants, they are truly a smart snack or treat. I have shared them with the young and old and the resounding response is, “These are amazing!” So I thought to share:

Super Bars

3 cups almonds
3/4 cup pumpkin seeds
1 1/2 cup macadamia nuts
2/3 cup cacao nibs
3/4 cup sesame seeds
1 cup coconut flakes
3/4 cup goji berries
3/4 cup hemp seeds
1/2 cup ground flax seeds
1 generous teaspoon salt
2 T vanilla bean paste
3/4 cup cacao butter melted gently (coconut oil may be used but will not hold the bars together as well unless well chilled)
1/2 cup jerusalem artichoke syrup (coconut nectar or agave nectar may be used as well)
1/4 cup agave syrup
3/4 cup raw almond butter (any raw nut butter can be used)

Raw chocolate Sauce recipe to follow for dipping

Blend nuts together in food processor.
Mix melted cacao butter, almond butter, syrups and salt until well emulsified.
Combine all ingredients and press into a flat rectangle, evenly at 1/2” thick.
Freeze or refrigerate until firm
Cut into squares and dip into raw chocolate sauce (recipe to come).
