One of my past careers was as the CEO of Cloud Nine Raw Chocolate. I thought that it would be the ultimate invitation to having your cake and eating it too! I wanted to invite people into a healthy lifestyle with abundance and joy, and chocolate seemed like the ideal pathway toward that aim. This more recent recipe is one inspired by the healing benefits of raw chocolate and the experience of treating myself with something special without the immune suppressing sugar.

Sugar Free, Raw, Vegan Chocolate

1 cup cacao butter, melted gently over the lowest heat

1/3 cup coconut butter

1t sea salt

1T alcohol free vanilla flavoring

2-4 drops of vanilla stevia

2-3 cups raw cacao powder

Mix the coconut butter into the melted cacao butter, add all other ingredients (except the optional ingredients). Whisk in the cacao powder. Pour into a glass container lined with parchment paper. Sprinkle chocolate with optional toppings. Put a lid on it and refrigerate for 4 or more hours.

Note: Be sure to purchase the highest quality raw, vegan ingredients you can find. Feel free to experiment with pecans, pistachios, hemp seeds, chia seeds, etc. The options are endless.
