The first time I ate this was in Paris when I had a soiree out with my sister-in-law. It was a beautiful evening and this dish remains etched in my mind. Spring Peas
1 cup sugar snap peas
1 cup English peas
1 cup green beans
1 T fresh mint
1 t vegan butter (optional) or flax oil (optional)
Maldon salt to taste (optional)
Place a heavy sauce pan with 1/2 cup water, place peas and beans in the pan with the water and simmer until all peas and beans are crisp, tender. Drain and place in a large bowl, sprinkle with optional oil and salt and enjoy!
