My daughter has inspired me to make healthy food over –the–top fun. I was experimenting with fourth of July popsicles which were beautiful. One layer was a blueberry puree, one layer (home made) coconut yogurt, one layer pureed raspberries. But these take a long time to assemble and freeze. So I created another project for us and as she and I were playing in the kitchen today, we created a super delicious treat that is decorative, decadent and in every way healthy and fun.
Raw Chocolate Dipped Strawberries
1 pint of local or ripe strawberries, washed and dried
½ cup raw cacao butter, melted
¼ cup raw cacao powder
2-3T raw, local honey or maple or agave
pinch of sea salt
¼ t vanilla
Mix all the chocolate ingredients together in a bowl and dip strawberries one–by–one in the chocolate mixture. I continuously mixed the chocolate as I was dipping to avoid separation of the chocolate. Place dipped strawberries on a plate and chill for 20 minutes. You will have to let them chill longer if the strawberries were at room temperature before dipped. Double dip the chilled strawberries for a thicker layer of chocolate.
These make a delicious and decorative contribution to any meal, party or buffet.
