Here is a special treat that I love to make when berries are in season. There are raspberry bushes lining my property here in MD. The ripe red flecks in juxtaposed against the green forest is exciting indeed. It inspires me to create. This is a fun treat that is occasional in summertime. All the neighborhood children love to eat this and keep asking for more! Try this raw berry cobbler a try for a change. Raw Berry Cobbler
Total Time: 15 minutes
Serves 4
Raw fruit (and food) has more vitamins, minerals, enzymes, antioxidants and immune enhancing properties than cooked fruit (and food). 
 
Crust and Topping
½ cup dates or figs, soaked for 2-4 hours
1 cup walnuts, almonds or pecans
¼t cinnamon
pinch of sea salt
½t vanilla paste, use the best vanilla you can find!
Fruit Filling
2 pints of blueberries, raspberries, blackberries or 1 lb. of strawberries
¼ cup dates or figs
¼t vanilla paste
Blend the dates in a food processor fitted with an “S” blade until they form a paste (or ball up). Add the remaining ingredients and blend until dough sticks together. Being careful not to over blend or the crust and topping will be greasy.
In a blender, blend the berries with the dates and vanilla until well blended.
Gently press the crust into a ramekin or pie plate saving a cup or more to sprinkle over top, and pour the berry filling over top. Sprinkle remaining crust as a topping and chill or serve immediately.
