Nori Wraps- One of my favorite on-the-go foods. Fast and scrumptious, and full of nutrients to keep the glow on. 

Ingredients:

4 Nori Wraps
1/2 avocado sliced into
1/4 inch wedges
1/2 red pepper, minced
2 green onions, chopped
Sprouts of choice (sunflower is my most favorite)
4T pine nut nacho cheese

Directions:

Lay one Nori Wrap shiny side down, fill with one length sprouts and top with 1/4 of each of the avocado, peppers, green onions, and cheese.

Fold over top and roll while moistening the outermost edge to seal the roll together. Allow to rest and wrap in saran wrap or eat right away.

Pine Nut Nacho Cheese

Ingredients:

2 cups of pine nuts soaked for 4 hours
1 clove of garlic
1/4t habanero (more or less depending on your spice tolerance)
1/8 cup lemon juice
.5T Celtic sea salt (or less)
1T chipolte powder (less if you do not like it spicy)
1T sunflower lecithin
3/4T nutritional yeast
1 cup filtered water (or more if you want it runnier)

Directions:

Rinse pine nuts thoroughly and drain. Chop garlic and habanero. Place in a high speed blender with lemon juice, salt, chipotle powder, sunflower lecithin, nutritional yeast and filtered water and process until smooth. If you choose a denser cheese add less water and add a little at a time until desired density is reached. Remove from blender and store in a glass container in the fridge for up to 4 days.
