Last night I attended a social gathering and created this salad for the event. Everyone RAVED about it and requested that I post the recipe. I hope you enjoy it as much as we did.
Macadamia Nut Goji Berry Kale Salad
1 lb kale
1 lb purple kale
1/4 cup goji berries
1/4 cup coconut, shredded
1/8 cup hemp seeds
2/3 cup shredded apple, pink lady
2/3 cup shredded carrots
1/2 cup chopped macadamia nuts
1-2 T extra virgin, first cold pressed, organic olive oil, pumpkin seed or black seed oil mix
1-2 t Celtic sea salt
2T freshly pressed lemon juice
Wash and dry kale well. With your hands, massage kale with sea salt, lemon juice and oils until it begins to wilt.
Hint: You are breaking down the cell wall of the kale and releasing its innate ability to be absorbed by your body.
Allow to sit for 20 minutes up to overnight in fridge.
Add additional ingredients and enjoy!
