Today on FOX 45 morning show I presented classic healthy holiday treats. As a child my mother sister and I would spend an entire day baking cookies and preparing packages to give to our doctors, teachers, neighbors and friends. This was a family tradition.
To be honest though, I love to give treats to all those who contribute to my life, but not unhealthy, sugar laden treats. I now have recreated treats that I feel good about giving. Here are a few highlights of what I made.
Raw Chocolate Peppermint Balls
Raw, Vegan Pumpkin Mousse Pie
Raw, Vegan Pecan Pie
Vegan Chocolate Chip Cookies
Lazy Day Treats
Here is the recipe for the cookies which use banana to increase sweetness and reduce the amount of sugar and fat and coconut and oats to increase the fiber content.
2 bananas, mashed
1/4 cup coconut oil
1/4 cup maple syrup
1/2 t vanilla extract
1 2/3 cup freshly ground oat flour
1/4 t baking soda
1/2 cup shredded coconut
Pinch of sea salt
1/4 cup of dark chocolate chips
Preheat the oven to 350 degrees.
Mix banana, oil, maple and vanilla until well emulsified.
Combine flour, baking soda, salt and coconut.
Mix wet and dry ingredients together and gently fold on chocolate chips.
Spoon 1 heaping teaspoon of mixture on a baking sheet and bake for 11-15 minutes.
