Winter is a perfect time to enjoy starchy root vegetables. Going onward is indicative of Winter as is the energy downward, such as the root vegetables. They grown down and into the soil. Enjoy this delicious, grounding soup for your lunch or dinner. Warm, light and deep. 

Vegan Creamy Celery Root Soup 

1/8 t thyme, fresh or dried 

1/8t black cumin seeds

1/2t caraway seeds

1/4t fennel seeds

1-2t oil of choice (ghee, coconut, avocado)

1/2 cup shallots, chopped

Warm the oil and add spices until aromatic. Add onion and sauté until soft. 

Add 

1.5-2 cups celery root, peeled and chopped

1/2 cup sweet potato, chopped (optional) 

Satuee for a few minutes for spices to coat and flavors to come together. 

Add 

4 cups vegetable broth, warmed

Cook over medium heat until tender (20-30minutes) and puree in a blender.

Top with, a few drops of freshly squeezed lemon juice, smoked sea salt and truffle powder
